Certification training for Vince Lombardi’s Steakhouse team members occurs in four quarters and their development covers four areas:
1st quarter - Attitude
2nd quarter - Technical Skills
3rd quarter - Knowledge
4th quarter - Lombardi's Background and Vision
The initial reference material, supplied to new team members, provides the foundation for most of the education needed for their position. The reference material is divided by quarter and is reviewed prior to the start of the shift that corresponds to a specific quarter's training. Additionally, Lombardi’s training includes a detailed approach to acquiring the technical skills and knowledge required for team positions.
Attitude (enthusiasm, sincerity, and courtesy) is paramount to everyone on the Lombardi's team. In the fourth quarter of their training, the history of the Lombardi Legacy is reviewed. Upon completion of these four quarters, the game is complete.
The goal of our certification program is to provide assistance in becoming a professional team member. To accomplish this goal, we must first have a clear understanding of the responsibilities of the position.
There are many reasons why people choose to relax and have fun at Lombardi's. We know they are looking for a quality experience that is unique. Each team member in Lombardi’s is required to keep the following important points in mind:
1. Every guest must be served excellent food & beverages and it is the team member’s responsibility to ensure it, acting as our final quality inspector. Our team players are the experts who demand the presentation of each item served meet the standards that have been set forth. Each item needs to be top quality or it simply is not served.
2. Every guest will have pleasant surroundings. Before our guests are seated, Lombardi’s must be clean and ready to go. "Clean" means that everything in the room is spotless, including chairs, tables and the floor. "Ready to go" means that team players are mentally prepared to provide our guests the highest service levels possible.
3. All of our guests are to receive exemplary "service." In order to accomplish this goal, our team players must know all aspects of the "how to" portion of their position. They must learn every procedure set forth in their reference manual and training quarters. Their ability to organize and consolidate their moves is a must in order to deliver the type of service our guests have come to expect. Organization includes knowing how to be at the right place at the right time, and always knowing what the next move is. Consolidation involves taking as few steps as possible to complete the job.
4. Quality service will be provided by people who care. This includes the entire staff (service attendants, hosts/hostesses, bartenders, servers, managers, chefs, and runners) working as a team, not as individuals. One person cannot operate an entire game alone. A game is only won through the efforts of many individuals working together toward the same goal.
